Here are just a few of the many gluten free menu items we provide for clients:

  • Eggplant Rollatini – In this dish, eggplant serves as a replacement for pasta. The slices of eggplant are marinated and roasted. We use Italian herbs and seasonings and stuff the rollatini with a delicious veggie blend. This dish is also dairy free to meet the needs of guests with additional dietary needs who still want to enjoy the flavors of the Mediterranean.
  • Gluten Free Quesadillas – Please be sure you are ordering the quesadillas with a gluten free tortilla because we also offer flour tortillas for your patrons without dietary restrictions. These quesadillas blend traditional southwestern US seasonings with chicken and veggies. But then we combine the flavors of the Mediterranean by adding feta cheese.
  • Quinoa Falafel – Since falafel is made from chickpeas, it is often (but not always) gluten free anyway. We’ve combined chickpeas with quinoa to once again bring the hemispheres together in a delicious meal. Rice flour is used as the binder between the two. This can also be served to vegan travelers!
