Restaurant Reopening Guidance from the National Restaurant Association

The National Restaurant Association has issued a 10-page guide to safely reopening following the COVID-19 pandemic. Here are some of the highlights.

  • Cleaning & Sanitizing – Regularly disinfect all contact surfaces and food prep areas. This includes door handles, countertops, and bathrooms. Switch to disposable menus or thoroughly disinfect reusable menus between guests. Make hand sanitizer available to employees and guests at all entry points and tables. Be careful not to use toxic cleaners in places where food will be prepared. After closing, thoroughly disinfect the entire establishment.
  • Hygiene & Health Monitoring – Enforce strict handwashing practices for workers and bar sick employees from entering.
  • Social Distancing – Space seating appropriately, even if that means having fewer covers. Provide PPE for workers, including masks, gloves, and face shields. Move as much seating as possible to the outdoors.
  • Food Safety – The best practice is to avoid buffets altogether, even if they are allowed by local officials. It is better to substitute with individual grab and go portions in sealed containers. Maintain normal measures of food safety, such as disposing of expired products. Minimize the contact between workers and food.
